Overnight Oatmeal Pancake Recipe

My family is centered around cooking and baking, which has only been magnified throughout quarantine. The other night, after eating a large dinner and having a family movie night featuring Fun in Acapulco (starring the handsome and very suave Elvis Presley), the only thing for my family to do, of course, was to think of the next day’s breakfast. So, at 11 pm my mom, sister and I scurried down to our half-lit kitchen and started preparing the Overnight Oatmeal Pancakes we previously found on Food52.

Playing music on low, we collected all of the ingredients from our cupboards and fridge. Upon gathering all the needed materials we came across a problem: our buttermilk was expired! BUT! This did not stop us from creating our breakfast masterpiece and we quickly researched ways to get around this (for anyone running into the same problem its 2 cups of whole milk + 2 tablespoons of lemon juice πŸ˜‰). We combined the oats and milk into a container and placed it on a special shelf in our fridge - it was practically glowing in the fridge light 🀀. My mom also went ahead and mixed the dry ingredients in a separate container so our coffee-less brains could think less the morning of, and all would be ready to go when we got to the kitchen in the morning.

The next day, the three of us woke up early and combined our two concoctions  β€“ a bit worried about the thickness, BUT TRUST ME IT WORKS LIKE THAT. We all stood around the stove waiting for the pancakes to brown, and eager to flip them over. The moment they hit the table, all of our plates were practically licked clean. All I have to say is that these pancakes do NOT disappoint. They are SO fluffy, SO light and have an AMAZING texture that I have never experienced before. With a little splash of maple syrup, a nice pad of butter, and a cup of coffee, these pancakes are easily one of my top 5 breakfasts, and we will FOR SURE be making them again soon. I highly recommend for anyone who’s a night owl (hoot hoot) and who’s looking to spice up their mornings with something a bit different!
