Butternut Squash Bisque with Ginger Recipe

I don’t know about everyone else, but whenever I see the Butternut Squash Bisque anywhere at Tufts I have a mini celebration and sometimes even let out a little excited squeal. Well I just missed it so much I had to make it myself at home - and it was such a hit with the fam that I made it twice within a week! So I highly recommend this recipe, because it brought back MEMORIES of Dewick, Carm and endless amounts of oyster crackers. Heads up: good tip would be to buy precut butternut squash, unless you’d like to spend a solid 30 minutes to an hour cutting up a whole squash - doable but not easy. Trust me. It was a dangerous sport that almost ended in several cuts and many sacrificial pieces that flew to the floor during all of the cutting! But other than that - EASY! So bring back your memories, turn up that nostalgia, and bring the Tufts soup to your home!
